The process of open-vat brewing

The Pécs Brewery proudly preserves the craft of traditional beer making, one of the most important elements of which is open-vat fermentation. This centuries-old technology not only determines the character of the beer, but also turns the brewing process itself into an experience. Fermentation in open vats is a particularly delicate process that requires great care and expertise. For optimal fermentation of the brew, a stable temperature of 8.5 degrees Celsius is required, which the brewmasters check every two hours using a traditional, hand-held, copper immersion thermometer. This precise, meticulous attention ensures that fermentation proceeds at a natural pace and that special, 10-15 centimeter thick, continuous foam crown can form in the vat, which is one of the most beautiful signs of excellent quality. Standing next to the vats, this sight is not just a technological process - it is a unique moment of living Pécs beer history, tradition, aromas and timeless beer culture.

After the main fermentation stage of seven days is completed, the beer is transferred to the lagering tanks using another traditional method. Using the power of gravity, instead of pumping, the drink flows naturally, slowly and gently into the tank. This delicate process preserves the bound carbon dioxide in the beer, which plays a prominent role in creating the special, sparkling character of Pécsi Sör. The philosophy behind the technology is simple, yet great: the less intervention, the more natural and distinctive the taste.

Maturation, or maturation, is also a long process that requires patience – it usually takes three to four weeks in the depths of cool tanks. During this time, the beer’s final flavor develops, the velvety full taste, the pleasantly effervescent presence of carbon dioxide, and the special, inimitable character for which Pécsi Sörök is known. In every sip, there is tradition, love of craft, more than a century of experience, and the unique recipe carefully developed over this time, which forms the basis of the character of Pécsi Sörök.
